OLIVIA PELUSO: Globally, agriculture is the largest cause of deforestation, the number one cause of extinction and the largest user of arable land. It emits more greenhouse gasses than all of the world’s transportation combined, and contributes to a third of all freshwater pollution.

“I think there would be so much attention to this issue if it wasn’t what was on our plates,” says Forbes 30 Under 30 2020 lister Arturo Elizondo, the founder of lab-grown protein developer The Every Company. While working for the U.S. Department of Agriculture, he became impatient with the elephant in the room and split to find a solution fast. “The more I got into it, the more I realized that changing food is incredibly difficult to do because it’s cultural. Food is emotional.”

“I knew that we couldn’t guilt our way into a better food system, but we had to make it as simple and easy and convenient as possible,” says Elizondo. “And that’s where I kind of came out with this thesis: We have to revamp the backend of food production, but without compromising the front end and the consumer experience.”

He soon linked with his cofounder Dave Anchel, a microbiologist, to create their flagship product: lab-grown egg proteins. Now, with their proteins in a few products, The Every Company is figuring out how to make lab-grown proteins accessible not just in the U.S., but across the world… Elizondo says he’s currently tackling how to change the narrative around animal alternatives from compromises to compelling products. “We really want to think about how to lead with an uncompromised future because no one wants to eat something when they feel like they’re trading off”.
