JANET FORGRIEVE: ‘Burger King’s recent announcement that it would test the plant-based Impossible Whopper at 59 Missouri restaurants with an eye on rolling it out nationwide brought back memories for Gene Baur. Baur is the president and cofounder of Farm Sanctuary. In the early 1990s, visitors to the safe place for rescued farmed animals in Watkins Glen, New York, were clamoring for vegetarian food at the town’s restaurants. “If I didn’t know what I was eating, I would have no idea it was not beef,” he wrote. The products have come a long way since Baur’s activism took hold in the late 1980s, when he would follow the Grateful Dead and sell vegan hot dogs from a Volkswagen bus while educating concert goers about the problems with factory farming.
